It isn't... actually is is written BjÖrk! I think for English speakers, non-German and non-Scandinavian it is a bit difficult. I try to explain how it is actually pronounced:

Ö is spoken like [ø] or [œ] ->http://en.wikipedia.org/wiki/%C3%96
The R after Ö is spoken like rolled R or rolling R or alveolar trill [r] ->http://en.wikipedia.org/wiki/Alveolar_trill

so it is b-y[œ][r]k
