Composing is writing the vocal melody. Arranging is basically the production of the song, laying down beats, instrumentation, chord progressions, etc. Mixing involves adjusting the sound levels of each instrument so that they mesh perfectly.

How I best understand it:

Composers create the melody of a song. If you hum a song, you are humming the composition (the singing notes, etc.)

Arrangers decide when and where certain sounds and instruments go. They essentially are in charge of the instrumentals and other background sounds.

Mixers bring all the recorded products together and decide volume levels, stereo channels, etc. They "mix" everything (from vocals, to instruments, to beats, since everything is rarely done at once) and bring you the final product.

Of course, lots of these jobs can be done by many people at once or just one entirely. And then there's also producers who have their own various jobs in song production.
